Mark Dowers
Mark has been Chef at Caprial's Bistro since 1993. After graduating from the Horst Mager Culinary Institute in Portland, he worked for several years as a chef at the Stonehedge Inn in Hood River, Oregon, and The Grant House on Officers' Row in Vancouver, Washington. He spent time exploring other regional cuisines while working in restaurants in Seattle and New Orleans before taking on his position at Caprial's, where he continues to develop his innovative style of preparing local ingredients with a worldly flair. Known around the Bistro as "The Soup God," Mark shared many of his memorable recipes as co-author of the book Caprial's Soups and Sandwiches. Mark also contributes to the culinary program at the cooking school where patrons can learn the secrets to his fabulous cooking that wows the Bistro's dinner guests.
